Beetroot might seem a little exotic for a baby but my toddler has loved it from extremely early on and beetroot dip is still one of her favourites. You can make your own by just taking a few 30g portions and mixing them through my hummus recipe.



Makes 4 x 30g portions

1-2 beetroot (about 150g) peeled and cut into 1-cm cubes

2-3 tbsp cooking liquid


Boil the beetroot in a saucepan for 25 minutes or until completely tender. Place in a food processor and puree down until smooth with 2-3 tablespoon of your cooking liquid.
