Overnight Oats

The perfect weekday breakfast for when you are all in a rush to get out the door. Its simple, highly nutritious and doesn’t require anything other than some basic store cupboard ingredients. Its also fantastic if you don’t have time to eat breakfast at home as you can pop it into a jar or container for kids at early bird sessions/ morning clubs or for you at your desk post drop off or to refuel after a morning workout. You can also vary the recipe according to yours needs/ tastes/ age.

Feeds 3 adults or 6 kids depending on how much a breakfast person you are! You can also make bigger batches and it will last for 2-3 days in the refrigerator.

Overnight Oats

1 banana

25g raisins, dates or dried apricots

250ml milk (animal or plant based)

zest of 1/2 lemon or orange

100g porridge oats

Toppings:

1 tbsp yoghurt/ 1 tsp nut butter or jam/ grated apple or pear/ 1 tsp mixed seeds

Place the banana, dried fruit, milk and zest into a blender and blitz to a puree. Pour into a sealable container and add the oats. Stir everything well and refrigerate for 4 hours or overnight. [Note: if making for children under 12 months blends the oats for a smoother consistency]. When ready to serve, remove your oats from the fridge and serve with your choice of toppings.
